Sausage and Broccoli Rabe Frittata

Frittatas are great breakfast-for-dinner option that can be customized for your particular palette. If you prefer an all veggie option, go for it!



Kale and Ricotta Breakfast Pizza

Kale on a breakfast pizza is delicious! If hard-boiled eggs aren’t your thing try scrambled. You can keep it lighter with turkey bacon or saute up some sausage and make it a bit heartier.

Sausage and Egg Casserole

You will fall in love with this breakfast casserole and work it into your breakfast and dinner rotations on the reg. It requires sitting several hours prepped in the fridge. If you’re planning on having it for dinner prep your ingredients the night before so you can just toss them together in the morning. Pop it in the fridge and it’s ready to go in the oven when you get home. It’s great with french bread (as suggested in the recipe) but it’s also super delicious with sourdough bread.

Corned Beef Hash

Hash for dinner is so amazing you’ll find yourself making a roast just to have the necessary leftovers to make the hash. Corned beef is great but it also works incredibly with a roast beef or pork roast. Any combination of veggies: potatoes,sweet potatoes, Brussels sprouts, mushrooms, carrots, beets, and onions… voila! You have a hash! Get extra fancy and top it with a poached egg and/or Hollandaise sauce and you have a rustic, yet sophisticated meal!

Quiche

Quiche is one of the best Brinner options. It pairs delightfully with an arugula and tomato salad. It stands on it’s own as a dinner or breakfast.

Breakfast Sammies

There’s just no end to how many different combos you can make when it comes to the breakfast sandwich. When it comes to the bread alone you have countless options. When you work in the meats and cheeses you could probably have a different sammie everyday and never repeat. Especially if you start adding in the veggies.

English Muffins, bagels, crostini, toast (white, wheat, rye, Hawaiian, Challah, sourdough, etc…), the biscuit, pancakes. Use your imagination.

Poached eggs are one of the key ingredients to one of the best options in the breakfast world… Eggs Benedict! They’re also pretty delicious in all sorts of Brinner situations (like that hash up above). The problem with poached eggs is that they’re really hard for a lot of people to make. Hollandaise Sauce

Everyone should know how to make a good Hollandaise sauce because it’s not only super delicious but it’s also quite versatile. Drizzle a bit on seafood or a succulent little Fillet Mignon. It classes up so many dishes and an obvious go-to if you’re trying to impress!
