One of our all time favorite salads is the mediterranean pasta salad and in an effort to save time we are going to begin this recipe with a packaged salad mix. Then we will add those tasty fresh Ingredients straight from the garden or market. It is so easy and one of the very best thing is that you can make it the night before and let all of those herbs and seasoning create a harmonious blend of pure goodness.
This is a super easy recipe and you might just have some of these ingredients already in your pantry.
- Suddenly salad (classic)
- 1 cup boiled and drained corkscrew pasta
- English cucumber
- Yellow pear Heirloom cherry tomato (or regular cherry tomato)
- Red onion
- Kalamata olives
Ingredients for Mediterranean Pasta Salad
1 package suddenly salad, pasta boiled and rinsed
1 cup corkscrew pasta boiled and drained
1 English cucumber
1 pint cherry sized yellow or red tomatoes
1 small red onion finely chopped
1 container of feta cheese
1 small jar of kalamata olives drained
1 small jar of pimento
1 fresh jalapeno finely chopped
Package of dressing from suddenly salad
Half of cup of good Olive Oil
Italian seasoning, salt and pepper to taste
Put it all together!
Rinse and drain the pasta according to package directions and set aside.
Rinse your vegetables well, dry and then chop them all up to the desired size.
Mix the package of dressing from the suddenly salad mix with olive oil.
Season pasta salad with extra italian seasoning, salt and pepper to taste.
Toss all ingredients together.
Cover pasta salad and refrigerate overnight and if needed add extra olive oil and seasonings in the morning.
Toss a few times before serving.
